Coconut Lime Energy Bites

Saturdays are for making healthy snacks that are easy to prep and great for grab and go situations.
- 1 cup almonds
- 1 ½ cup medjool dates, pitted
- 1 scoop @genuinehealth fermented vegan proteins+ vanilla or unsweetened
- 3 key limes, zest and juice
- ½ cup unsweetened coconut ⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀
- Place almonds in the bowl of a food processor. Pulse until finely chopped.
- Add dates, @genuinehealth fermented Vegan proteins+, lime zest and juice. Pulse until mixture begins to stick together in clumps.
- Roll dough into balls and toss in shredded coconut ⠀⠀⠀⠀⠀⠀⠀⠀⠀
