NUT & DATE ENERGY BALLS

If you ask me what my favourite kitchen appliance is, I’ll always say my Vitamix! It’s just so functional - from full meals to snack time, it’s always my go-to. Here's my recipe for Nut and Date Energy Balls. The perfect grab and go snack which really shows the versatility of the Vitamix Ascent A3500 and how it can work for dry chopping.

Ingredients

* 1 cup raw almonds

* 1 cup walnuts

* 2 cups raisins

* 6 dates, pitted

* ¼ teaspoon vanilla extract

* 1 cup shredded coconut

Directions

1. Place the almonds and walnuts into the Vitamix container and secure the lid. Select Variable 6 and Pulse 8 times.

2. Remove the lid and add in the raisins, pitted dates, vanilla, and coconut.

3. Replace the lid and remove the lid plug. Insert the tamper.

4. Select Variable 6 and Pulse 35 to 40 times, using the tamper to press the ingredients into the blades.

5. Once the mixture looks wet and begins to cake, the mixture is done. Roll into ½-ounce balls and chill before serving.

By far my favourite appliance in the kitchen!
