PESTO SPAGETTI SQUASH

Pesto Spaghetti Squash, it's my go-to hosting meal - that dish you fix to impress when entertaining. Spaghetti squash is a nutritious winter vegetable that offers lots of fibre and is a perfect stand-in for pasta. The Vitamix Ascent A3500 makes this meal incredibly easy, it's fresh and full of flavour, also here's my expert entertaining tip - it pairs perfectly with Sauvignon Blanc. Bon Appetit!

Ingredients

½ cup olive oil

½ cup grated Parmesan cheese

3 garlic cloves, peeled

2 cups fresh basil leaves, chopped

3 Tablespoons pine nuts

salt and pepper, to taste

Directions

Place all ingredients, except salt and pepper, into the Vitamix container in the order listed and secure lid.

Select Variable 1. Turn machine on and slowly increase speed to Variable 7. Blend for 1 minute, using the tamper to press the ingredients into the blades.

Spaghetti Squash

1 medium to large spaghetti squash

Preheat oven to 375 degrees F. Cut the spaghetti squash in half from the stem end to the base, rub the inside lightly with olive oil, salt and pepper and roast it cut-side down on a baking sheet until tender, about 35-45 minutes. Remove from oven and let rest until cool enough to handle. Using a fork scrape the insides spaghetti-like out. Combine and serve.
